Ingredients
- 2 pounds New York Style Sausage Company Mild Italian Sausage
- 1 pound thick cut bacon
- 1 medium yellow onion, chopped finely
- 1 bunch celery, cleaned, trimmed and chopped finely
- 10 carrots, peeled and cut into bite size pieces
- 10 small gold potatoes, cleaned and cut into bite-sized pieces
- 1 (32 oz) box of chicken broth
- 1 pint heavy whipping cream
Instructions
- Cook the Bacon: In a Dutch oven, cook the bacon over medium heat until crispy. Once cooked, remove the bacon, leaving the drippings in the pot.
- Sauté the Vegetables: Add the finely chopped onion and celery to the Dutch oven. Sauté briefly until the vegetables absorb the drippings.
- Brown the Sausage: Add the Italian sausage to the pot, breaking it into bite-sized pieces as it cooks through. A Mix ’N Chop tool works great for this!
- Combine Ingredients: Stir in the carrots, potatoes, chicken broth, and heavy cream.
- Simmer: Allow the soup to simmer until the carrots and potatoes are tender.
