Quick, Comforting, and Easy Pho-Inspired Chicken Soup

Soup is one of my favorite things to make and eat, especially on a cold day! There’s something so comforting about a hot, flavorful broth. My family and I are big Pho lovers, and this Pho-Inspired Chicken Soup is a perfect way to satisfy those cravings. Best of all, it’s incredibly simple to make and uses ingredients you might already have on hand. It’s an excellent quick meal option for busy evenings, whether you’re coming home from work or wrapping up an afternoon of kids’ sports practice!

It’s All About The Broth

For my soup base, I used two boxes of chicken broth, a package of Lipton soup mix, and two tablespoons of chicken bouillon. Once the broth was boiling, I added thinly sliced onion, mushroom, and chicken. It’s important to let the chicken cook fully after adding it to the broth, which will depend on how thinly it’s sliced. Speaking of slicing, I have to give a shoutout to my new Pampered Chef Coated Utility Knife—it made slicing the chicken a breeze! Cutting chicken is usually one of my least favorite tasks (even worse than dealing with onions), but this knife made it so quick and easy that I barely noticed.

Let’s Talk Noodles

If you’ve never used Pho noodles before, there are a few important things to keep in mind:

1. Soak ahead of time: Soaking the noodles in cold water for 30–45 minutes before cooking helps soften them and reduces the cooking time. This step also prevents them from becoming overly starchy or clumping together.

2. Cook them separately: Always cook Pho noodles in a separate pot from your soup. This keeps your soup broth clear and prevents the noodles from soaking up too much liquid or becoming mushy.

3. Serve fresh: Only cook as much as you need for each meal. Pho noodles don’t store well once cooked—they tend to break down and lose their texture.

4. Assemble at serving time: To serve, place the cooked noodles directly into your bowl, then ladle the hot soup over them. This method keeps the noodles at their best consistency and allows for easier portion control.

5. Rinse after cooking: Once you’ve boiled the noodles, rinse them under cold water to stop the cooking process and remove excess starch. This keeps them from sticking together and helps maintain their smooth texture.

This Pho-Inspired Chicken Soup is a quick and easy way to enjoy the flavors of Pho at home. Made with a rich chicken broth base, tender chicken, fresh mushrooms, and aromatic onions, this soup is perfect for a cozy meal on a chilly day. With the addition of Pho noodles, it’s a filling, delicious dish that can be prepared in no time. It’s the ultimate comfort food for busy days or when you’re craving a bowl of something warm and hearty.

Ingredients

  • 2 chicken breasts, thinly sliced
  • 2 boxes (32 oz each) chicken broth
  • 1 package Lipton Soup Mix (recipe)
  • 2 tablespoons chicken bouillon mix
  • 1 yellow onion, thinly sliced
  • 1 cup mushrooms, sliced
  • 1 package pho noodles

Instructions

  1. Prepare the Pho Noodles: 
    • Before starting your soup, soak the pho noodles in warm water for about 20 minutes, or according to the package instructions. Once they’ve softened, drain and set aside.
    • For best results, cook the noodles in a separate pan from your soup to prevent them from becoming too mushy. When ready to serve, simply place the noodles in your bowl, and pour the hot soup over them.
  2. Prepare the Soup Base:
    • In a large pot, add the two boxes of chicken broth, Lipton soup mix, and chicken bouillon. Stir until well combined.
    • Bring the broth to a boil over medium-high heat.
  3. Cook the Chicken:
    • While the broth is heating up, thinly slice the chicken breasts. (A Utility Knife, like the one from Pampered Chef, makes slicing chicken much easier)
    • Once the broth is boiling, add the sliced chicken, onion, and mushrooms to the pot. Stir occasionally and allow the chicken to fully cook. This should take about 5-7 minutes depending on how thinly the chicken is sliced.
  4. Combine and Serve:
    • After the chicken is cooked through, turn off the heat.
    • In each bowl, add a serving of soaked and drained pho noodles. Ladle the hot soup with chicken, mushrooms, and broth over the noodles.
    • Stir, and serve immediately.
